Hey POKER PLAYERS, how does one determine the high hand in 7card stud?

I play at Full Tilt and a few months ago I saw an off suit A take the pot. It was clubs and the winner had an A hearts. This morning I had a 2 Aces and a 5 clubs on the table and I lost. So can anyone give me a LOGICAL reason as to what happened? I play all the time and see many questionable calls. How can they expect me to put money on their site when they are making bad calls?
I had pocket A's a heart and a diamond. The winner had 8c +Js The flop was 3c Kc 6c, turn was a 9c, river was 2c.
In a previous hand a month ago my hand was similar to the winner but lost because the other player had an A. My question is how can this happen? If more info is needed than my apologies as I'm a rookie and just looking for a simple answer. Guess there isn't an easy answer an is why they get away with it.

The suits have no ranking in poker. If the offsuit A of clubs hand had A-K-8-7-6, then it's going to beat a hand that has the offsuit A of hearts if the hand is A-J-9-8-7, because the A-K hand is higher than the A-J hand.

In your second example, you had 2 Aces and a 5 of clubs? So what? What did the winner have? Lots of hands beat a pair of Aces. And what does the 5 of clubs matter? You had 4 other cards, right?

I really don't think they are making questionable calls, perhaps you don't know what the poker hands are.
